Emozioni di Aglianico
Semi-hard cheese, produced with cow’s and sheep’s milk, with natural fermentation acidity, semi-mature, aged in aglianico marcs.
The forms rest on, and are later covered by, a bed of wine pomace. They are awakened from their sleep only once the forms have absorbed the appropriate amount of wine scents. At this point the cheese is ready to be tasted in its essential components: milk, stable and all the scents of the Feudi di San Gregorio wine.
